Ingredients:
- 2 tablespoons olive oil
- 1 onion, finely chopped
- 2 green peppers, thinly sliced
- 2 tomatoes, diced
- 4 eggs
- Salt and pepper to taste
- Red pepper flakes (optional)
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat the olive oil in a large frying pan or skillet over medium heat.
- Add the chopped onion and sauté until it becomes translucent and slightly golden.
- Add the sliced green peppers to the pan and continue to cook for about 5 minutes until they soften.
- Add the diced tomatoes to the pan, season with salt, pepper, and red pepper flakes if desired. Stir everything together and cook for another 5 minutes until the tomatoes begin to break down.
- Create small wells or indentations in the tomato-pepper mixture with a spoon.
- Crack an egg into each well, taking care not to break the yolks. Season the eggs with a little salt and pepper.
- Cover the pan with a lid and reduce the heat to low. Allow the eggs to cook for about 5-7 minutes until the whites are set but the yolks are still slightly runny. If you prefer your eggs well done, you can cook them for a little longer.
