Cherry Gâteau Basque Recipe

Gâteau Basque is a traditional French pastry from the Basque region. It’s a rich, buttery cake with a delicious, fruity filling that has been enjoyed for generations. While the classic version features either pastry cream or cherry jam, today we’ll be making a Cherry Gâteau Basque with a sweet cherry filling that adds a fresh, vibrant touch to this already indulgent dessert. Let’s get started!

Ingredients:

For the Dough:

  • 2 cups all-purpose flour
  • 1/2 cup sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon rum (optional)

For the Cherry Filling:

  • 2 cups fresh or frozen cherries, pitted and chopped
  • 1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon lemon juice
  • 1/4 teaspoon almond extract (optional)

Instructions:

Step 1: Make the Dough

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. Add the softened butter and mix until the dough resembles coarse crumbs.
  3. Beat the egg and vanilla extract together, then add them to the dough mixture. Mix until the dough comes together. If it feels too dry, add a tablespoon of rum or a little water.
  4. Divide the dough into two portions, one slightly larger than the other. Wrap both portions in plastic wrap and refrigerate for at least 30 minutes.

Step 2: Prepare the Cherry Filling

  1. In a saucepan, combine the chopped cherries, sugar, cornstarch, lemon juice, and almond extract (if using).
  2. Cook the mixture over medium heat, stirring constantly, until the cherries release their juice and the filling thickens (about 5-7 minutes).
  3. Remove from heat and set aside to cool.

Step 3: Assemble the Gâteau Basque

  1. Preheat your oven to 350°F (175°C) and grease a round 9-inch cake pan.
  2. Roll out the larger portion of dough on a lightly floured surface to fit the bottom and sides of the pan.
  3. Spread the cherry filling evenly over the dough, making sure it’s well-covered but leaving a small border along the edges.
  4. Roll out the smaller portion of dough and place it over the cherry filling. Seal the edges by pinching the dough together.
  5. Using a fork, make a few small holes on top of the dough to allow steam to escape while baking.
  6. Bake for about 40-45 minutes, or until the top is golden brown.

Step 4: Cool and Serve

  1. Let the gâteau cool completely before removing it from the pan.
  2. Slice and serve at room temperature, or slightly chilled for an extra refreshing touch.
