Known as Noah’s Pudding in some cultures, this nutritious and flavorful dessert is made from a variety of grains, dried fruits, and nuts. Aşure is typically prepared during the Islamic month of Muharram and shared with family and friends, embodying the spirit of unity and generosity.

If you want to try making this delicious dessert at home, here’s a simple and authentic recipe for Aşure.

Ingredients:

  • 1 cup wheat (soaked overnight)
  • 1/2 cup dried beans (soaked overnight)
  • 1/2 cup dried chickpeas (soaked overnight)
  • 1 cup bulgur wheat
  • 1 cup sugar (or more to taste)
  • 2 cups water
  • 4 cups milk
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/2 cup raisins
  • 1/2 cup dried apricots, chopped
  • 1/2 cup dried figs, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup hazelnuts, chopped
  • 1/2 cup pomegranate seeds (for garnish)
  • 1 teaspoon rose water (optional)

Instructions:

  1. Soak Grains and Legumes:
    The night before, soak the wheat, beans, and chickpeas separately in water.
  2. Cook the Grains and Legumes:
    In a large pot, combine the soaked wheat, beans, and chickpeas with 4 cups of water. Bring to a boil over medium heat and cook until the grains are soft and cooked through (about 45-60 minutes).
  3. Add Bulgur and Simmer:
    Add the bulgur wheat and continue to cook for an additional 20-25 minutes until everything is well combined and thickened.
  4. Add Milk and Sugar:
    Slowly pour in the milk, stirring constantly. Add the sugar, cinnamon, and nutmeg. Continue to cook until the mixture thickens.
  5. Add Dried Fruits and Nuts:
    Add the raisins, dried apricots, and figs. Let them simmer for another 10 minutes.
  6. Flavor Enhancements:
    Add rose water for a subtle floral flavor (optional).
  7. Serve and Garnish:
    Let the Aşure cool slightly, then transfer to serving bowls. Top with chopped nuts, pomegranate seeds, and a sprinkle of cinnamon.

Serving Suggestions:

Aşure is best enjoyed warm or chilled. Serve as a dessert during special occasions, especially during Muharram, or simply as a sweet treat to share with loved ones.
