Instructions:
Step 1: Prepare the Syrup
- Make the syrup first so it can cool while you work on the pastry. In a saucepan, combine the sugar and water.
- Bring to a boil and simmer for 10 minutes.
- Add lemon juice and a few drops of rosewater (if desired), and let it simmer for another 5 minutes.
- Remove from heat and allow the syrup to cool completely.
Step 2: Prepare the Kataifi Pastry
- Preheat the oven to 180°C (350°F).
- In a large bowl, separate the strands of kataifi dough with your fingers. You want them to be loose and fluffy.
- Pour the melted butter over the dough and mix well until all the strands are coated.
Step 3: Assemble the Künefe
- Grease a round baking dish with some melted butter.
- Place half of the buttered kataifi dough into the bottom of the dish, pressing it down to form an even layer.
- Tear the cheese into small pieces and distribute it evenly over the dough layer.
- Cover with the remaining kataifi dough, pressing it down gently to make sure it’s compact.
Step 4: Bake the Künefe
- Bake the dish in the preheated oven for 25–30 minutes, or until the top is golden and crispy.
- Once baked, remove from the oven and immediately pour the cooled syrup evenly over the hot Künefe.
- Let it sit for a few minutes to soak up the syrup.
