Künefe Recipe: A Delicious Turkish Dessert

Künefe is a traditional Turkish dessert made from thin, crispy vermicelli-like pastry soaked in syrup and filled with delicious melted cheese. This sweet, rich dish is a perfect way to end a meal and is especially popular in the southeastern regions of Turkey. If you’ve never tried it, this recipe will guide you in creating an authentic, mouthwatering Künefe.

Ingredients:

  • For the Pastry:
    • 200g Kataifi (shredded filo dough)
    • 150g unsalted butter (melted)
    • 200g unsalted cheese (like mozzarella or a mild, stretchy cheese)
  • For the Syrup:
    • 1 cup granulated sugar
    • 1 cup water
    • 1 tablespoon lemon juice
    • A few drops of rosewater or orange blossom water (optional)
  • For Garnish:
    • Crushed pistachios (optional)
    • Extra melted butter for greasing

Instructions:

Step 1: Prepare the Syrup

  1. Make the syrup first so it can cool while you work on the pastry. In a saucepan, combine the sugar and water.
  2. Bring to a boil and simmer for 10 minutes.
  3. Add lemon juice and a few drops of rosewater (if desired), and let it simmer for another 5 minutes.
  4. Remove from heat and allow the syrup to cool completely.

Step 2: Prepare the Kataifi Pastry

  1. Preheat the oven to 180°C (350°F).
  2. In a large bowl, separate the strands of kataifi dough with your fingers. You want them to be loose and fluffy.
  3. Pour the melted butter over the dough and mix well until all the strands are coated.

Step 3: Assemble the Künefe

  1. Grease a round baking dish with some melted butter.
  2. Place half of the buttered kataifi dough into the bottom of the dish, pressing it down to form an even layer.
  3. Tear the cheese into small pieces and distribute it evenly over the dough layer.
  4. Cover with the remaining kataifi dough, pressing it down gently to make sure it’s compact.

Step 4: Bake the Künefe

  1. Bake the dish in the preheated oven for 25–30 minutes, or until the top is golden and crispy.
  2. Once baked, remove from the oven and immediately pour the cooled syrup evenly over the hot Künefe.
  3. Let it sit for a few minutes to soak up the syrup.

Step 5: Serve and Garnish

  1. Serve the Künefe warm. If desired, sprinkle crushed pistachios on top for added flavor and a beautiful touch.
  2. Enjoy your homemade Künefe with a cup of Turkish tea or coffee!

Tips:

  • Cheese choice: The cheese used in Künefe should melt well and be mild in flavor. Mozzarella or Turkish cheeses like Hatay cheese are perfect for this dish.
  • Texture: If you want extra crispiness, use more butter and ensure the kataifi dough is well-distributed in the pan.
  • Serve immediately: Künefe is best enjoyed hot and fresh, straight from the oven!
